Turkey bake – three recipes for an oven baked dinner

Turkey bake with spinach
This particular bake comes without pasta, nor rice or potatoes, making them a good side dish. Some pastry may also be a good idea, take fresh french bread for instance. A turkey and spinach bake is best served hot!
Ingredients (4-6 people, time of preparation: about 60 minutes):
- 500 g of minced turkey meat(thigh should be your first choice but fillet is also fine)
- 450-500 g of frozen spinach leaves
- 1 peeled and finely chopped onion
- 2-3 cloves of garlic – peeled and pressed
- 100 ml of 30% cream.
- a pinch of nutmeg
- 2 eggs –scrambled
- 200 g of grated mozzarella cheese(like the one used for pizza)
- salt & pepper
- olive or clarified butter
Directions:
- Preheat the oven to 180 Celsius degrees. Grease the casserole dish.
- Heat the grease in a pot, adding spinach and garlic. Braise to a point where a larger portion of water is gone. Add salt and pepper for better taste then put it all away to cool down.
- Put a spoon of grease on your frying pan and let the onion fry a bit then add turkey meat seasoned with salt and pepper and wait until it is ready. Add cream and nutmeg then braise it all together to thicken the gravy. Finally,put it into the casserole dish.
- Mix your chilled spinach with eggs. Use it to cover the turkey.
- Finish your dish with mozzarella cheese on top and put it all in the oven. Bake it for 30-40 minutes until it is brown on top.
Turkey bake with rice
A bake like this can actually be a full dinner. If you feel like it, use any other cheese of your choice. Original feta will do the trick.
Ingredients (6-8 people, time of preparation: about 60 minutes):
- 300 g of turkey breast, cut into cubes or stripes
- 1 pack of frozen vegetables – 450 g ( a mix of broccoli, cauliflower and carrot)
- 2 bags of rice of your choice, boiled according to the instructions on the box
- 2 tablespoons of mayonnaise
- 2 tablespoons of 18% or 30% cream
- 150 g of grated mozzarella cheese (or any other kind of cheese)
- salt & pepper
- favorite meat seasoning spices
- any kind of fat for frying and to grease the dish
Directions:
- Preheatthe oven to 180 Celsius degrees. Grease the bigger one of your dishes and put it aside.
- Steam the vegetables or stew them on a skillet with a little drop of oil until surplus water evaporates, ensuring they are still pithy. Add salt and pepper then mix vegetables with stained and cooled rice.
- Fry the seasoned turkey on a skillet until it turns brown. Mix it with vegetables and rice.
- Finish your dish with mayonnaise and cream sauce. Mix it with the rest of your bake ingredients then put it all in a casserole.
- Sprinkle the top with cheese and put the dish in the oven. Let it sit until your turkey bake turns brown on the top or until the cheese melts (everything has been precooked anyway). Serve immediately, while still hot.
Turkey noodle bakea la bolognese
Need a change from spaghetti? This version of turkey casserole will definitely put a smile on its fans’ faces. It is also a lighter dish because instead of pork or beef, we will use a turkey fillet.
Ingredients (6-8 people, time of preparation: about 60 minutes):
- 400 g of minced turkey fillet
- 200 g of any pasta (pipette rigate, smaller conchiglie or rotini suit best)
- 1 small onion –peeled and cubed
- 2 cloves of garlic – pilled and pressed
- 1 can of chopped tomatoes
- 1 tablespoon of tomato paste (optional)
- 2 tablespoons of olive oil and then some to grease the dish
- salt & pepper
- dried herbs of choice, eg. oregano and basil
- about100 g of grated cheese (may be less) – eg. meltable mozzarella, parmesan or grana padano
Directions:
- Fry olive oil with onion and garlic. Before they brown, add turkey meat and season it then mix altogether until the turkey is ready.
- Add tomatoes and tomato paste to the meat. Mix it all and simmer until it thickens. Add salt, pepper and herbs. Tip: if the sauce is too sour, add some sugar to balance out the taste.
- In the meantime, heat your oven to 180 Celsius degrees and grease the casserole with olive oil.
- Cook pasta accordingly to the instructions on the packaging, then strain it and put into the oiled casserole.
- Pour the sauce on your pasta and sprinkle it with cheese then put it all in the preheated oven. The turkey bake should be ready in 15-20 minutes when the cheese melts or browns. Best served straight from the oven.
